How to Make Delicious Bar Cookies: Buttery Almond Shortbread and Chewy Lemon Nut
Bar cookies are not only very tasty, they are easy to make. No baking in a couple of batches, watching that the edges don’t brown too much, etc, but conveniently 1 pan and 1 oven time. When cooled they are easy to cut into bars, serve and/or store. Try these yummy recipes for easy treats. Buttery Almond Shortbread Bars are quick and easy to make. Give yourself a half hour to make, bake and set to cool. Shortbread makes great cookies for lunchboxes, etc as they are not messy. Almonds are healthy and should be eaten as part of a healthy diet. The chewy lemon nut bars have healthy oats and whole-wheat flour in the ingredients, two items to be considered in any healthy diet. These cookies are not only quick and easy, they also fit into the healthy cookie category!
BUTTERY ALMOND SHORTBREAD BARS
2/3 cup butter flavored shortening
2/3 cup sugar
1 egg, separated
2 tbsp milk
1/2 tsp almond extract
1 1/2 cups all-purpose flour
1 tsp water
1/2 cup finely chopped almonds
Preheat oven to 350 degrees. Spray a 9 x 13 x 2-inch pan; set aside.
In a medium mixing bowl, cream together the shortening, sugar, Egg Yolk, milk, and almond extract. Add the flour to the mixture and blend together. Spread the mixture evenly into the prepared pan. Add the water to the egg white in a small mixing bowl. Beat the mixture until until foamy. Brush the egg white mixture over the surface of the dough. Sprinkle with the almonds, pressing them down gently with your fingertips. Bake at 350 degrees for 18 to 20 minutes or until light golden brown. Cool for 10 minutes before cutting into bars.
CHEWY LEMON NUT BARS
1 cup all-purpose flour
1/3 cup whole-wheat flour
1/2 cup packed Brown Sugar
1/4 cup granulated sugar
3/4 cup butter
1 cup quick oats, uncooked
1/2 cup chopped pecans
1 pkg (8-oz) cream cheese, softened
1 egg
3 tbsp lemon juice
1 tbsp grated lemon peel
Preheat oven to 350 degrees. Grease a 9 x 13-inch baking pan.
In a mixing bowl, stir together the flour, brown sugar, and granulated sugar; cut in the margarine until mixture resembles coarse crumbs. Stir in nuts and oats. Reserve 1 cup of the mixture; set aside. Press the remaining crumb mixture into the bottom of the prepared pan. Bake at 350 degrees for 15 minutes.
Beat the cream cheese, egg, lemon juice, and lemon peel in a small mixing bowl using medium speed of electric mixer, until well blended. Pour the cream cheese mixture over the baked crust. Sprinkle the reserved crumb mixture over the top of the cream cheese mixture.
Bake at 350 degrees for 25 minutes. Cool before cutting into bars.

How To Make Delicious Sugar Cookies
I love baking cookies! Especially if I have an easy and quick to make sugar cookie recipe to stick to. However my favorite aspect is the decorating. That is just what transforms a basic everyday cookie into a delicious work of art. Let your creativity come out!
So the first thing we need to do is to make the cookies. There will be no creaming butter or sugar required. The dough is blended within a Food Processor. Simple as that..
Ingredients required:
2 ½ cups plain all-purpose flour
5 ½ oz unsalted butter, chopped
Pinch salt
3 tbsps sugar
2 egg yolks beaten along with four tbsps cold water
Pre-heat your oven to 400 F / 200 C. Cover two baking sheets with parchment or baking paper.
In the bowl of a food processer, mix your flour along with your butter till it looks like coarse crumbs. Insert your salt and sugar and mix for a second time till just combined, being cautious not to overmix the batter.
While the motor still running, add your Egg Yolk mixture and blend using the pulse button until it forms a shiny ball.
Take out of processer, cover in plastic wrap and cool in the refrigerator for thirty min’s.
Now grab the mixture from the fridge and divide it into small sized amounts for rolling. When rolling a single piece, keep the rest refrigerated. Work the dough out to a quarter inch thickness. Utilizing Cookie Cutters, cut out shapes, positioning the cutters as near to the sides as possible in order to reduce the amount of instances you re-roll the dough. Perform repeatedly using the leftover dough, after that mix all the remaining dough and re-roll.
Position upon your baking sheets permitting space for spreading and bake for ten or fifteen min’s or until they are a golden color. Take them our of your oven and keep the baking sheets on for another few minutes before putting them on to wire racks to cool off.
Permit the cookies to cool completely before icing and decorating.
Here comes the exciting part, icing and decorating. Glace icing is ideal for this sugar cookies recipe. It may be sprinkled over the top or made into simple designs.
This glace icing recipe is adequate to top 2 dozen cookies.
1 cup icing / confectioners sugar
A few drops of vanilla essence
1 tablespoon of hot water
A few drops of Food Coloring
Sift your icing sugar in a bowl then include the vanilla essence. Slowly mix in your hot water till the blend is the uniformity of thick cream. Include the water a couple of drops at a time right up until you have your desired consistency. In the event that you believe you have included too much water and the icing is too gooey, merely include more icing sugar.
Place a bit of icing in to the middle, then simply use a spoon to spread out to cover the whole cookie. The icing will set rather quickly, therefore when you’re including additional decorations, you’ll want to operate fast before your icing sets.

There is an interesting and delightful treat for all you fudge lovers out there. These would be the maple fudge. These tasty desserts will be great for parties or for intimate gatherings with friends and family. Everyone will surely love it.
Maple Nut Fudge
2 c Fancy or Grade A Medium Amber Pure Vermont Maple Syrup
1/2 c nuts; chopped
1 tbsp butter Boil syrup to 236 degrees.
Take away from heat then place into a pan of cold water. Cool to room temperature. Stir vigorously until color begins to change, then add nuts. Pour into well-buttered 8″ or 10″ square pan. Cut fudge in squares while warm.
Maple & Walnut Fudge
2 c packed Brown Sugar
Half of a 10 oz can milk (evaporated) – not condensed!
1/2 lb butter
2 c powdered (confectioners’) sugar
1 c walnuts
1/2 tsp vanilla
1/2 tsp maple flavoring (if desired)
Butter a 9×13-inch pan then set aside. I have determined lining the pan with foil or paper and buttering that makes cutting and removing much easier. Inside a medium-sized saucepan, combine sugar, butter & milk. Bring to a boil over medium heat. Reduce heat very slightly and boil 10 minutes while stirring constantly. No longer! Take out from heat and add icing sugar, vanilla and maple flavoring (if using). Mix thoroughly with Hand Mixer on medium until thick and glossy – just a couple of minutes. Fold in walnuts then pour in prepared pan. Refrigerate until set.
Note: This recipe also doubles easily. For really succulent fudge double and still use the one pan. It’s thick and decadent, just like it should be. I cut this and freeze it inside a can every Christmas without a problem. Just be sure it’s really well wrapped. Enjoy!
Maple Cream Fudge
1 c White Meadows Maple Syrup Amber Grade
2 c white sugar
1/2 c whole cream
2 tbsp non salted butter
1/4 tsp salt
1/2 tsp vanilla
Put sugar, syrup, and cream in a pan. Boil on med-high, stirring once every few minutes to be sure that they don’t stick to the bottom of your pan. Let cool. Add vanilla, salt & butter – beat until creamy and fudge holds its shape. Put into pan lined with foil folding over the edges and slice into squares. Cool in fridge. Enjoy! Mix 1 part maple syrup with 2 parts melted white chocolate for an optional drizzle.
Maple Creams
1 c (250ml) pure maple syrup (use syrup labeled “Dark amber”)
2 c (400g) sugar
1 c (250ml) heavy cream
2 tbsps light corn syrup
1/2 tsp vanilla extract
1 c (125g) walnut or pecan pieces, toasted Lightly oil a 9- by 9-inch (23-by 23cm) square pan. (If you don’t have a square pan this size, you could use a well- greased cookie sheet.)
Inside a small heavy-duty saucepan (about 2 quarts) mix together maple syrup, sugar, cream, & corn syrup. Fit a Candy Thermometer to the side of the pan then heat just until temperature reaches 236F (114C), tilting the pan to submerge the bulb, if necessary, to gauge the correct temperature. Remove the pan from heat then transfer mixture into the metal bowl of a standing electric mixer.
Submerge the thermometer in the candy mixture until it has cooled to 110F (43C), which will take a while. When the temperature is 110F (43C), add in the vanilla and beat mixture until it just begins to thicken and loose its gloss. Over mixing will make it grainy, so keep an eye on it. Mix in nuts then spread mixture out into the square pan, patting it in flat with your (clean) hands. Let cool completely, then take out from your pan then slice in squares. To take it out from a square pan, run a sharp knife around the inside of the pan to loosen it, then cut it in half. Use a metal spatula to pry the candy looses a bit (it will be flexible). Invert the pan a shake it to coax your maple cream candy out.

Best Spritz Cookie Recipie Ever?
Would anyone mind sharing the best ever Sprtiz recipie they’ve used? The last one I tried was kind of bland and not very tasty. I want to make yummy ones for Christmas.

This is my favorite spritz cookie recipe. I looked on-line first becasue i didn’t want to try and dig mine out. It’s made with Philadelphia brand cream cheese. You can even add Food Coloring to the dough for a more festive look, Enjoy!

“LARGE cookie cutter”

I just looked at the shape and did not realize how large these were. Very High Quality, and all of the different shapes available are awesome here. I have mine out/displayed in the kitchen as it is quite pretty, but beware these cutters are for LARGE cookies and if you are baking to a certain cookie count you’ll be busy. (But no cookie eaters have voiced complaint about largeness).

Plastic Easter Eggs Aren’t Just for Jelly Beans Anymore – Create Some EGG-citement During Your Easter Egg Hunt This Year!
Easter is just a HOP, skip and a jump away! As my kids get older I realize that they are less impressed with the jelly beans they may find in their treasured plastic eggs. What does every good mom do with this knowledge? – think outside the egg. Don’t get me wrong, they are happy to open the egg and eat the candy; however, I’m always the mom going for the BIG surprise. You know this mommy moment – the one that brings tears to your eyes because you know you brought that amazing element of egg-citement to your child’s face.
As the kids get older, the eggs seem to multiple like bunnies. In a house that started out with probably a dozen hidden eggs, I’m embarrassed to say we’ve accumulated many many dozens of plastic eggs AND an Easter treasure hunt, complete with Easter clues leading the way to a big basket.
Here are a few egg-filling ideas to create more Easter magic in your home:
- A Personalized Letter from the Easter Bunny – how cute is that?
- Bunny Money – this clip art “money” is found in the eggs by the kids to be used to purchase items displayed on the “bunny table.” The items are mainly cheap trinkets and items they would need. A few ideas might include a whoopee cushion, pool toys, a new swimsuit, a Frisbee, a pack of gum, movie tickets, and lottery tickets.
- Coupons/gift certificates – homemade or store bought. Older kids love a coupon to get out of completing a chore or staying up late. Teens love a gift card to their favorite clothing store, fast food chain or iTunes.
